Disc spindles from a '69 to '73 C body will bolt on. The '73 setup is preferred because the rotor is cheaper but the 69 to 72 setup is fine.

Scarebird also makes a kit that uses a Dodge Ram caliper with a 70's Ford LTD rotor.

The ideal set-up is to find a 73 C-body be it a Polara, Monaco, Newport Fury etc and take the spindles and everything brake related and install on your 65. Spindles are a direct bolt in.

If your 65 is a power brake car you will need to change to a disc brake booster as the drum booster doesn't have enough oomph to run discs properly.

The 73 booster can interfere with the column shift linkage on a 66 and newer. Not sure about the clearance with a cable shift like yours but it will physically bolt up. Console shift is a non issue.

The dual diaphragm from a 66-68 with Budd discs won't interfere with the linkage but is harder to find. I have one from a 69 300 on mine which IIRC is smaller diameter than the 73 but I don't know about clearance as mine is a console car.

Use the 73 master and proportioning valve and plumb it the same as the 73. 73 flex hoses should work but you might have to change how the hardline connects to the flex ie the angle it comes off the frame to orient the flex line properly to the caliper.

I used the 73 set up on my 65. My car is non power but I can't remember what master I used. I think it was the 73 non power disc unit. No issues with the cable shift.

The '65 is column shifted and I guess I'd need to swap the factory style booster for a disc one.

The latest Mopar Muscle Magazine has an article on just this type of swap. When I had my 66 Chrysler 300, I went with the SSBC kit and a dual diaphragm booster. Worked as advertised....
