With a "quality" paint job on a full rotisserie resto, what is the typical process for painting? Is the unit body completely painted (base and clear coat) seperately from the fenders, doors, hood, etc. or is everything done partially, assembled and then finished? Seems to me that latter would have to happen to get things right and, if so, what is the procedure?

What I usually see is everything dissassembled, repaired, epoxy primed, Test fit sheetmetal lining up all gaps etc, test fit anything else that goes on the car (trim, grill, mirrors, sill plates, door panels, everything cause you don't want to fix it after paint!), with sheetmetal still installed (but nothing else) block sand the car, block sand the car again, block sand the car again, wet sand the car, carefully remove the sheet metal keeping track of any shims and where they go, paint all the sheetmetal base & clear, paint the unibody base & clear, extremely carefully reinstall sheetmetal, color sand, buff, polish.
Note: This is different from the OE procedure which is basically to apply a rust preventative to the metal to metal contact areas (like under the door hinges), Then install all sheetmetal, and primer then paint the car. Any areas that get missed, Oh well.

My gold 71 was done like that, You know what? After I put that baby loving together, I started to notice every panel was a little different color  ... After a bout a year it got worse!!!!
luckly my painter disassembled alot of my car and repainted the whole thing. At his cost every penny. He did'nt want any paint lines anywhere the first time but the metalic color gold bite him in the rear , but he made it right. It still sucked having to repaint the car a second time after a complete resto. My

 Painting a metallic with panels off is a crapshoot and best avoided. While some get away with with it, many do not. Opaque colors can be done that way but even then the painter is wise to make sure the SAME paint (I.E. can/batch) is used, on the same day, same number of coats etc.
Metallics should be painted as a complete car. Candies are the hardest--you're litterally dealing with transparent paint. I learned that in the 7th grade painting a candy-apple red 10 speed.

Well its FK5 if that matters, but it was painted same time, same coats, same batch/can, so hopefully I'll be fine, don't jynx me.  It hasn't been out in the sun to any extent and it is about 4 years old at this point (I'm on the 10 year plan too).
Careful, your character's showing!
