I'm working on a tunnel rammed "stock" 318 with a pair of 1850 holley 600's on it. I just need to get it running ok, nothing great. I'm thinking because the engine is stock, I might need help keep the power valves closed longer so it would foul the plugs.

Power valves will probably be the least of your issues with that setup. If you don't have a really good ignition on it, it's gonna foul plugs anyway.
I'm guessing it's also an automatic with a stock converter and 3.23 or higher gears?

i agree that the combo sounds a bit strange.
as far as the power valves go.....you need a vacume gauge to properly size the power valve. do a google search and you will find the proper procedure for selecting a power valve.

If you get those carbs in tune, It will run fine, even on a stockish 318, A single carb set-up or smallers "carbs" of coarse would run better, but you won't have the "WOW" factor which i'm sure thats what your after & you already have the 600s, You may also need to jet those carbs down a bit. The 1st. thing i would do is make sure the ignition is strong & in good shape, & get a quick timing curve in it with as much initual timing as possible, a good adj. dist. helps wonders with setting up the curve & RPM your after for total timing, I like the MSD 8534 Billet.
