I am in the process of mounting a dual 2-speed electric fan set up on my Dart. The fans run together on low and high.
Do I need two 4-pole relays, or can I use one 5-pole relay, to switch between low and high?

Hmm, you'll need two relays unless you want it to run all the time on low speed.

There are three wires leading into the wiring harness for the fans.
One is to ground, the second is for low speed and the third is for high speed.
Both fans run together.
If I use two relays, will I also need to run two switches? Or can I use a double throw switch to move between low and high?

You can use a double throw switch. I used a double pole double throw and wired the low speed side to a thermostatic switch.
