Why does the Mopar Chassis Manual say "For racing purposes, we DO NOT recommend the use of 11" clutches (except for the 11" scalloped, which is really a big 10-1/2")." ???? I think I should take this with a grain of salt. Just wondering WHY? I am still keeping my 11", book or no book.

It was just because there is a lot more available in the 10.5 size. The 11 inch does not have much variety of products available for it.
