Does Edelbrock offer a 600-625 AVS-type carb? That would be very close to the Carter AVS the '68-69 383 4-bbl cars came with.

EDIT: They make some different models of the AVS 650... close enough.

What I don't know is if their mechanical-choke version will work with the OEM choke device, or if you'd need to use their electric-choke model (assuming you still want to have a choke).

the throttle bores on the edelbrock 600's are identical to the stock avs. the edelbrock 650's are closer to venturi size of the stock carb. i'd do a 650.

I'd suggest an eddy 1406 (600 cfm). I see used ones regularly for reasonable money. Highly likely you can get one in good shape just rekit it.

"not very mechanical" tells me rebuilding a carb is probably not in his wheelhouse.

Edelbrock has gotten real proud of their stuff lately, sad because it's generally decent stuff. Summit has them, $345 for a new 1406, $312 for a factory refurbished one. You can find a third party reman 1406 on Amazon for much less.

They say there are no such thing as a stupid question.
They say there is always the exception that proves the rule.
Don't be the exception.

there is a fresh post on FABO (eddy 1406) for $150+ the ride. The add has a good "feel" to it.

Here is a link to the AVS2 650 cfm,electric choke,standard finish(not shiny):
https://www.summitracing.com/parts/edl-1906/overview/

The manual choke version is about $30 less,it might work with the OE choke thermostat,but electric would be a good replacement IMO.

We just put one on an Olds 350,replacing the same that had a manual choke.(The manual version can not be retro fitted with an electric choke like the AFB Performer series)
