We are trying an EFI setup for a 440 and one of the main parameters we have to enter is "rear wheel torque value".

440 - .030 with six pack pistons.
3906 heads that were cut .020 or .030 with steel gaskets.
MP .455 lift 272 duration hydraulic cam

Has headers, mandrel 2 1/2 out rear, Street Dominator intake

What's a decent guess at rear wheel torque???

Only if you're running a 1:1 rear end whistling

Multiply your 400 ft-lb by your rear gear ratio. Then divide by two since half goes to each wheel.

It's got 3.91 gears and a 518 4 speed trans.
Asks for a rear wheel torque and says it defaults to mild Chevy 350 specs which it says is is 300 ft lb....

Rear wheel torque would be flywheel torque times 1st gear ratio times rear gear ratio and would be a figure in the thousands. This is with a manual trans w an auto the torque converter would increase it even more....

Throw a number in it and go drive it, then change that number ONLY and see if it likes the change or not scope
TEST, test and test some more until your so happy you know you have it perfect up wrench grin
Watch the AFR output also carefully at part throttle and WOT scope You will know when it is making you very happy work thumbs

Only if the program is expecting MAXIMUM torque at the wheels, and not the ratio in a direct (1:1) high gear. OP didn't specify. And don't forget to divide by 2 since half goes to each wheel.
