I've done this swap before on a carb 4cyl mopar, where I went and backtracked the harness to swap out what I wanted. It's a ton of work and you need a really good understanding of the EFI system. Also you will definitely want to scrounge up a bulkhead connector pinout diagram for the donor harness. That way you can see what wire does what. Start going through it and scrap the sections for stuff like horn, headlights, etc and just keep the engine control portion of the harness. It's doable but a lot of work.
autozone.com has some wiring diagrams in their repair zone area. They won't have the bulkhead diagram but they will have a diagram of the whole engine control system. Much better than having nothing at all.

Do you already have an idea of what donor to get the ECU and harness from?
I've heard the early EFI v8 mustang (80 something) was a popular choice for this mod. Was the distributor also needed or is there a fool proof way to achieve EFI nowadays?
Let us know what you find, I have a lot of service manuals so I might be able to get ya a pinout for the ECU.

Yes the later ones tend to use a large fuse box under the hood with fuses and relays for everything. The older EFI's didn't use that, instead they used fusable links and a couple relays inside the ECU's. You're much better off with the fuse box system. Tracing down blown fusable links buried in the wiring harness is not what I would call fun.
