for that RPM range and gearing you can probably use almost anything. FWIW late 70s big block cop cars were in that range (2600-2800) and they petered out at 4000 rpm. they ran ok with them. if you are adventurous you could try a stock converter and see where it winds up. making more power should push the stall speed up
Looking for 1975 through 1978 B body 4 door sedan sheet metal or parts cars - monaco, fury, coronet. Please let me know

IIRC 360s had 727 trannys so a 360/727 torque converter wont work in a 904..
I am truckless..
