1997 Cherokee was running smoothly when serpentine belt shredded. After putting on a new belt it started having problems at idle. Now it appears to flood and dies. It won't start except by holding gas pedal to floor and running starter until it clears out. Whats up with that?

Yes, but... The only code was for engine temp due to belt coming off.

Will your scanner show sensor readings? Possibly the coolant temperature sensor was hurt and making it run rich. Other wise you are going to need to verify fuel pressure and go from there. Clear codes and see what comes back.
