Do all the trucks have the same harness? Can I add remote mirrors on a truck that didn't come with them? Looks like there is a plug in each door panel for the mirror harness, and I will need the control stick, but just want to check before I order them...

I did this on my '96 Ram 2500 4x4 - the wiring was already there and all I had to add was the power mirrors and the controller joystick for the driver's side door panel. I did check to make sure the wiring was there by removing the door panel and verifying before I ordered power towing mirrors. The later year trucks use a different wiring setup than the earlier trucks and I believe some allow for a heated mirror option. If you do find the wiring and embark on this job, be sure to pickup some extra door panel clips, as some will break upon removal of the door panel.

Yes, I pried one of the door panels and I can see the wire with the open plug. I just didn't know if I could put remote control mirrors on a non-remote control mirror truck. I have changed mirrors on my last one, and put the heated towing mirrors on it...That was nice. It already had heated small mirrors on it though.
