Has anyone installed the crank mounted oil slinger disk along with the Mopar timing chain tensioner? On my poly 318, the disk rubs on the tensioner arm. I'm assuming I can just leave the disk out? Will I have an increased chance of leaks at the front seal with the disk not installed?

Are you afraid of you seal leaking or what. That is the reason for the slinger - not to oil the chain but to keep excessive oil from the front seal. New seal materials rarly leak without it and they were only installed intermittantly OEM. Some did and some didn't.
Clean it, if it's Dirty. Oil it, if it Squeaks.
But: Don't fix it, if it Works!
