It seems pretty apparent that Mopar had blocks that were used quite often 1-2 years later than cast date. It is likely they were set aside for minor repair or other quality issues and then sent to the plants after repairs were completed. It is surprising some of them were around up to 2 years or so....but seems very likely to me.

dodge has always had a casting problem,inventory situation , on my ww2 VC military trucks,, the motor casting are backwards,, last block in was first out on production line, they didnt care,, just grab one and go. , when a new casting batch came in, it was placed infront of the left over first batch,, then and NOW there is a gap, when production/assemble started over again.. if someone wants to start a excel spreadsheet,, you can track this, with dates, etc.
we've done this with several, wwii trucks/ jeeps, tanks etc,, its interesting to read the data

Short blocks wouldn't get stamped ... I think ... but would have the riveted tag on the side saying what the short assembly build number was for reference.

It is also possible that an engine just didn't get stamped, the lunch or end of shift bell rang and the guy dropped what he was doing and off he went ?

I had never heard of this with castings but I have read about this same thing happening in the same way with wheels. Apparently they came on pallets and were stored in the assembly plant. When the inventory started getting low, the plant would order more wheels, they would go in front of the existing wheel inventory and then be used before existing inventory. Sooner or later, production would get back into the original inventory and voila', a date gap. The memory is foggy but I seem to remember the article saying that a gap of up to a year (on wheels that were in current production) was not uncommon.
