I've bought a van with 360 that's been sitting for a few years with intake manifold removed, and probably not covered very well, if at all.
I'm afraid that dirt and mess could get into the engine - how should I go about starting it again? Flush with oil? Clean in some way?
Gettin' old iron accross the pond...

The engine really needs at least solvent poured through with the drain pug out. It needs at least a check of each cylinder for debris with maybe a borescope if needed. It needs to be primed with a drill motor and hex shaft turning the oil pump, and engine needs to be rotated by hand ( use a socket and breaker bar on bolt in harmonic balancer). Of course marvel mystery oil would help when refilled with oil. The truth of the matter is it should be pulled out and disassembled. Since it is not a high value engine, and if you want to try your luck, the simple measures are worth a try !

Well first pull the oil plug and see what comes out if there is any water it's bad. Then turn it over by hand. If no water then it likely did not get any down the intake port either. Then you can go from there!

can you turn that motor over with a socket?
I would seriously consider pulling the heads. the intake is off, so all you need to do now is pull 10 bolts out of each head, and new head gaskets for $40.
chances are, no one backed the rockers off, so some valves were held open all those years. a mouse may have found a nice little place to build a nest. that'll be hard to tell for sure without pulling the head, unless you have a bore scope.
once you verify it's clean in the bores, pour some kerosene or other environmentally friendly solvent that they let you have over there, that is NOT water based. (gasoline will work if that's all you can get, but BE CAREFUL!!!) then fill it up with fresh oil, prime the oil pump and let it rip!
