IMO, I'd go with at least the 180, if not a 195. Too cold and you increase wear.
If going down the highway it likes to run at 200*, you could run a 195. The thermostat just regulates the opening temperature, not the steady state operating temperature.
If you ever find yourself in a fair fight, your tactics suck.

I agree. A stat will not/cannot control the peak temperature that the engine will run if it wants to run over the stat rating. It can only try to maintain the engine operating temps from dropping below that point. If it wants to run at 210 it will even with a 160 star in it. It may take slightly longer to get there and your cooling system is not efficient.

I just installed a MP 360/300hp 375trq in my old police car. It came with a 195 thermostat but I installed a 180. That was a mistake, because the car barely moved the temp gauge no matter how long I drove it. It has the factory "Max Cooling" radiator, and MP Viscous Fan. I pulled the 180 and installed a 195. Much better, and still runs plenty cool.
Facts are stubborn things.
